Taliwang Irama is a Mataram institution that has been serving what many locals consider the definitive ayam taliwang since 1985. If you want to taste Lombok's most iconic dish at the place where generations of Sasak families have celebrated birthdays, weddings, and everyday meals, this is where you come. The restaurant sits on a busy Mataram street and looks unassuming from outside — a large covered dining area with plastic furniture and fluorescent lights — but do not let the decor mislead you. The food is extraordinary. Their ayam taliwang uses young free-range chicken (ayam kampung), which has a firmer, more flavorful meat than commercial poultry. It is marinated overnight in a paste of crushed red chilies, shrimp paste (terasi), garlic, shallots, and candlenut, then grilled slowly over coconut-husk charcoal. The result is explosively flavorful — spicy, smoky, with a depth of umami from the terasi that is completely addictive. Order it with nasi putih (plain rice), plecing kangkung, and sayur ares (young banana trunk curry) for the full Sasak experience. A half chicken with rice and two sides costs around IDR 35,000 — staggeringly good value. They also do excellent sate rembiga (Lombok-style spicy minced beef satay) and sate bulayak (satay with pressed rice cake). Beverages are limited to tea, coffee, and soft drinks. The restaurant fills up at lunch and dinner, especially on weekends and holidays, but turnover is quick. No English menu, but photos on the wall show the main dishes. Parking is available on the street. Open 10am to 10pm daily.
